1. Operational
* Develop new recipes in line with the Restaurant concept
* Assist in food preparation for recipe development, test panels, demonstrations and trade shows
* Keep tasks and responsibilities organized to meet projects deadlines
* Keep accurate records of lab work and documentation of ingredients used
* Explain the functional ingredients effects and its relation to the culinary development of the recipe
* Write recipes and preparation procedures for new and existing products
* Maintain clean, organized lab and efficient work areas
* Perform other duties in support of department or company needs as requested
2. Human Resources
* Implement and adhere to all back of house policies and procedures
* Develop training materials and standardized recipes for distribution to the field
* Train staff on all new items including maintaining quality control on menu items, overseeing proper ingredients, preparation and serving portions
* Hire and train new comers in the kitchen
3. Interpersonal & Managerial
* Collaborate with the sales and marketing department to identify and develop new products
* Recommend menu items on a weekly and monthly basis
* Prepare the portfolio of weekly specials at the beginning of each business year
* Develop and control the kitchen P&L and budget
* Conduct sensory evaluation and organoleptic testing for new products, reformulation of existing products, ingredient substitutions and competitive product evaluations
* Test raw materials finished products as assigned to reduce product cost without compromising product quality
